How long will the oven take to heat up before I can cook a pizza?

Between 30 and 60 minutes should be enough time for the oven to reach its optimal temperature. Once all of the black carbon has burnt off the inside of the oven you are good to go!

Is this oven only good for cooking pizza?

No! Virtually anything tastes better when wood-fired!

My fire keeps going out, what am I doing wrong?

Ensure that the door is left open to enable a free flow of air.

What type of wood should I be using?

The best wood is a well-seasoned hardwood with a moisture content of less than 20%. Woods such as oak, beech, ash or most fruit woods work perfectly. These types burn hotter for longer periods and reduce the amount of smoke and ash produced.

Can I use normal firelighters?

No. Firelighters must be free from chemical additives which may taint the taste of the food.

How do I clean and maintain my oven?

Wood-fired ovens are self cleaning! Due to the high temperatures any bacteria or dirt is continuously being burnt off making them virtually maintenance free.
